We have the honour of working exclusively with Eric Bordelet's cider house. A former renowned sommelier who cut his teeth at the three-starred L'Arpège restaurant, he turned his passion to growing apples, taking over the family business in 1992. Based in Hauteville, between the Mayenne and Orne departments, he farms 23 hectares of certified organic orchards. Eric Bordelet's sydres (old spelling) are produced in the same way as a wine, with stunning parcel-by-parcel work!
